SAT Billy argues that the legendary "song hunter" was a vital, SAT but overlooked figure in the Civil Rights Movement, whose SAT recorded archive would become the authoritative repository SAT of black folk culture in America. SUN SUN SUN We have been eating bread for over 10,000 years, and there SUN are 3,000 year old depictions of the royal bakery in the SUN tomb of Rameses III, in Egypt’s Valley of the Kings. SUN Sourdough is, in fact, the way in which we baked all SUN leavened bread until the 1880s, and the grains that were SUN used are what we now call heritage grains. SUN SUN Typically most ancient grains have a lower gluten structure, SUN which give the bread its lift, so to get the best of both SUN modern crumb and ancient flavour this recipe uses 20% SUN heritage flour blended with today’s strong white. You can SUN use any heritage flour, but my favourites are Rivet, Emmer, SUN Einkorn and Khorasan wheats, and Spelt. SUN SUN Allow yourself about 3 –4 hours for the dough to be mixed, SUN folded and shaped ready to place in the coldest part of the SUN fridge to prove overnight. SUN SUN *(If you are new to bread making, you can, instead of SUN shaping the dough and putting it into a banneton, grease a SUN 2lb bread tin liberally with butter, let the dough rise in SUN it overnight in the fridge and then bake as per the recipe SUN instructions below.) SUN * SUN SUN SUN Equipment: SUN SUN A large mixing bowl SUN SUN A round banneton SUN SUN 2 clean tea towels SUN SUN A baking stone or a Dutch oven SUN SUN A large heatproof pan SUN SUN A sharp knife or ‘lame’ to slash the dough with SUN SUN SUN SUN Ingredients: SUN SUN 300g water SUN SUN 100g sourdough leaven (‘starter’)* SUN SUN 100g of heritage flour SUN SUN 400g organic strong white flour (and some extra for dusting SUN your banneton) SUN SUN 10g fine sea salt SUN SUN semolina, to dust SUN SUN Makes: 1 loaf SUN SUN SUN Early evening SUN SUN Mix ( SUN 6:00pm) SUN SUN In a large bowl whisk your water and starter and mix well. SUN Add all the flour and salt and mix until all the ingredients SUN come together into a large ball. SUN Cover SUN with a damp cloth and let the dough rest in a cool SUN environment for about 2 hours. SUN Fold SUN (8:30pm) SUN SUN Lift and fold your dough over, do a quarter turn of your SUN bowl and repeat three more times. Repeat 3 times at 15 SUN minute intervals with a final 15 minute rest at the end. SUN Shape SUN (9:30pm) SUN SUN Shape the dough lightly into a ball then place into a round SUN banneton dusted with flour (If you don’t have a banneton SUN then use a clean tea towel dusted with flour inside a SUN colander). Dust the top with flour, then cover with a damp SUN tea-towel SUN Prove SUN SUN Leave to one side for an hour then transfer to the fridge SUN (about 10.30 – 11pm), and leave to prove there for 8 – 12 SUN hours. SUN Bake SUN (between 7:00 and 11:00am) SUN SUN The next morning preheat your oven to 220°C for at least 30 SUN minutes before you are ready to bake. Place your baking SUN stone in the oven and a large pan of boiling water SUN underneath (or use a Dutch oven). The hydration helps form a SUN beautiful crust. Dust the baking stone with a fine layer of SUN semolina, which stops the bread sticking. SUN Then put your dough onto the baking stone and slash the top SUN with your blade. This decides where the bread will tear as SUN it rises. Bake for 40 minutes. SUN SUN Turn the heat down to 180°C (and remove the lid if you are SUN using a Dutch oven) and bake for another 15 – 20 minutes. SUN You need to choose just how dark you like your crust but I SUN suggest that you bake until it is a dark brown – it tastes SUN much better. SUN Storage SUN SUN Sourdough is really best left to cool completely before SUN slicing and is even better if left for a day to let the full SUN flavour develop. SUN SUN Once your sourdough has cooled, store in a linen or cotton SUN bread bag, or in a folded tea towel. SUN Note: SUN if you don’t like a crunchy crust on your sourdough bread, SUN simply wrap your bread in a clean tea towel whilst it is SUN still warm. SUN SUN * To make 100g of leaven, use 2 tablespoons of sourdough SUN starter, 50g of filtered water and 50g of strong white SUN flour, mix well and leave, covered on the side in the SUN kitchen. In one SUN section it is blocking light into the house. I don't want to SUN lose the hedge completely but it has become unsightly at low SUN level, as most of the green is higher up. I wondered about SUN coppicing it. Can the panel advise if Privet will respond to SUN coppicing as I would hope the regrowth would enable me to SUN keep a low level thick hedge in future. SUN SUN A. You could try topiary. It’s worth feeding the hedge after SUN cutting it back hard. SUN SUN SUN Q. After I got an allotment I turned my four raised beds in SUN the garden into beds for cut flowers. SUN SUN A. Yes, Chamomile is a good idea. Try the ‘Treneague’ SUN variety that provides good flowerless ground cover. If you SUN want to plant Chamomile on the cheap, then you could rip SUN open an unused Chamomile tea bag and plant the contents! SUN You could also plant Zinneas that have short roots and will SUN flower when the Daffodils are over. SUN You can also grow Daffodils through dwarf varieties of SUN Lavender, like ‘Hidcote’. Plant other summer bulbs like SUN Lilies or Galtonia (Summer Hyacinths). SUN SUN SUN Q. Do the panel have any suggestions for a brand new garden? SUN We were hoping to grow some ornamental trees or bushes that SUN don’t need too much maintenance. We have a north-facing SUN garden with reasonable drainage and sandy soil. SUN SUN A. Start with a plan. Watch the garden for a year to see SUN what happens. Plant dwarf fruit trees, which can be dug up SUN and moved with you if you move house. A greenhouse that can SUN be moved would also be a great idea. Get an accurate survey SUN and then sketch out what you want on tracing paper and lay SUN out all the pots in the garden before planting them. You can SUN also download computer aided design packages from the SUN Internet. Train fruit against some of the walls and fences. SUN Grow some veg. SUN SUN SUN Q. The soil is heavy and the area SUN does not get the sun until late in the day and all plants SUN thrive there (as well as the moss which I wish would thrive SUN less enthusiastically). SUN SUN A. Try and physically remove as much as possible and try to SUN regularly break up the soil surface to improve air SUN circulation. Mosses like acidic soils, so spread lime on the SUN lawn and over sow with grass seed. Choose varieties like SUN ‘Timothy’ that will be able to compete with the moss. Feed SUN the grass with blood, fish and bone meal. In the borders, SUN put newspaper over the moss and cover with mulch and the SUN other plants will grow over it. SUN Alternatively, embrace the moss and make a moss lawn. Plant SUN through with hardy Orchids and Dicksonia and it could look SUN amazing! SUN SUN SUN Q. I have a metal arch that is quite sturdy, with a SUN top-heavy Akebia quinata on one side. All its lower shoots SUN were eaten when the deer got in a couple of years ago and SUN the growth is now all above my head. The Campsis radicans SUN the other side will probably be high enough to catch the SUN wind this year. Before the leaves fell last year, the wind SUN caught the top growth in a storm and the arch is now leaning SUN at 20-30 degrees, though the Akebia roots are preventing it SUN from falling. What should I do to get it upright again, and SUN when? The Akebia stems are firmly twisted around the metal SUN of the arch. Will it grow again if I cut it hard back? I SUN know it’s not an ideal position as it's fairly exposed and SUN quite windy. It's southwest facing, and we're 100m above sea SUN level with a clay soil. SUN SUN A. Start by trying to get the arch in the upright position SUN as soon as possible and then firm up the ground and provide SUN some support for the arch. Drive some packing down the legs SUN of the arch to get it into place. You can chop Akebia back SUN hard after flowering. SUN Q. We moved a few weeks ago and I've found a rhododendron in SUN a pot in the garden with one foot in the grave, it's mostly SUN crispy brown but there are some green leaves here and there. SUN I believe it's been unattended for nearly 12 months so the SUN reason for its sorry state is probably lack of water. How SUN can I give it the kiss of life and bring it back to its SUN former glory? SUN SUN A. Keep it well watered now and as we get into spring, give SUN it a nitrogen feed and cut it hard back. If you have an acid SUN soil put it into the ground and let it get going and then SUN cut it back hard. Make sure it doesn’t have vine weevils. SUN SUN SUN Q. A trailing plant would work well. Try Ivy or Tomatoes. SUN Or go for architectural plants like Nepenthes or SUN Platycerium. You could try growing cucumbers in a larger SUN pot.
